Show Us Your Life on Kelly's Korner today is all about desserts!  (Are you reading her blog?  No!?  Well, you should!)  I don't do it often, but I've been know to blow my 300 calorie meal limit on dessert alone.  Sometimes you just need to let go and eat dessert for dinner. 
My fave?  Pound cake! 
What's better than pound cake?

 
Coconut Pound Cake

3/4 cup shortening              
1 cup butter, softened    
3 cups sugar                      
5 eggs                            
3 cups all purpose flour, sifted
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 cup milk
1/2 cup canned, unsweetened coconut milk
1 teaspoon coconut extract
1 teaspoon butter nut extract
1 3.5oz can flaked, sweetened coconut
Grated lime zest, if desired


1.  Preheat oven to 325 F.
2.  Grease and flour a 10-inch Bundt pan.
3.  Using electric mixer, cream shortening, butter, and sugar together.
4.  Add eggs one at a time, beating well after each addition.
5.  Sift together flour, salt and baking powder, and add alternately with milk (regular and coconut) to shortening mixture, beginning and ending with flour.
6.  Add coconut and butter nut extracts, and stir in coconut (if desired, I always leave it out and add to the top of the cake instead).
7.  Pour into prepared pan and bake for 1 hour and 25 minutes or until done.  Do not overcook!
8.  Cool for 10 minutes; invert onto cake plate.
9.  Optional:  If desired, top with coconut and grated lime zest.
10.  Cut.  Eat.  And hide this cake from your friends.  You won't want to give it up!
